INGREDIENTS
- 1 cup rolled oats
- 2 3/4 cups self-raising wholemeal flour
- 2 teaspoons baking powder
- 3 bananas mashed
- 1 cup blueberries
- 1/2 cup maple syrup
- 1/2 cup desiccated coconut
- 1 1/2 cups soy milk
- 2 teaspoons vanilla essence
- 1 cup olive oil
METHOD
- Step 1
Preheat oven to 180C. Line 30 medium muffin pans with paper cases.
- Step 2
Combine the oats, flour, and baking powder in a large bowl.
- Step 3
Make a well in the centre. Add the banana, blueberries, maple syrup, shredded coconut, milk, vanilla essence, and oil. Stir until all ingredients are combined.
- Step 4
Divide the mixture between the muffin pans. Bake for 25-30 minutes or until golden.
- Step 5
Set aside to cool before serving.
