MELISSA’S HEALTHY BANANA & BLUEBERRY MUFFINS

HEALTHY-BANANA-BLUEBERRY-MUFFIN-RECIPE

INGREDIENTS

  • 1 cup rolled oats
  • 2 3/4 cups self-raising wholemeal flour
  • 2 teaspoons baking powder
  • 3 bananas mashed
  • 1 cup blueberries
  • 1/2 cup maple syrup
  • 1/2 cup desiccated coconut
  • 1 1/2 cups soy milk
  • 2 teaspoons vanilla essence
  • 1 cup olive oil 

METHOD

  • Step 1
    Preheat oven to 180C. Line 30 medium muffin pans with paper cases.

  • Step 2
    Combine the oats, flour, and baking powder in a large bowl.

  • Step 3
    Make a well in the centre. Add the banana, blueberries, maple syrup, shredded coconut, milk, vanilla essence, and oil. Stir until all ingredients are combined.​

  • ​​Step 4
    Divide the mixture between the muffin pans. Bake for 25-30 minutes or until golden. 

  • Step 5
    Set aside to cool before serving.
